Once you have run an analysis, PLS allows you to extract data from
a specified coordinate. Is there a way to add a feature to the program
so data can be extracted from a datamat without having to run an
analysis?

I don't think that I am going to do so.
In fact, it takes almost no time to run a fake analysis just to extract
values of specified coordinates from a datamat, and here's the steps:
1. pick ONLY ONE datamat file (or session file if you are doing fMRI study);
2. run ONLY the "Mean-Centering PLS" without any permutation or bootstrap;
3. that means, both number of permutation and number of bootstrap are set to 0;
4. Saving PLS result to "anydatamat_MODULEresult.mat", where MODULE should be replaced by either PET, fMRI or BfMRI;
The above steps takes almost no time, and you can easily extract the
values of specified coordinates from any datamat in the way you have
familiared with.
